Tacos

Preparation Time: 10 minutes
Cooking Time: 30 minutes

Ingredients:

  • 500g Quality Mark beef or lamb mince
  • 1 Tbsp olive oil
  • 1 onion, finely chopped
  • 1 Tbsp tomato paste
  • 1 375g jar pre-prepared (mild, medium or hot) salsa
  • 200g Mexican-spiced tomatoes
  • 425g can refried or baked beans
  • 1 cup grated cheese
  • 10-12 taco shells

Method:

  • Heat oil in a pan and cook onion for 1-2 minutes, then add mince, stirring until browned. Drain off excess liquid. Add the tomato paste, salsa and tomatoes and simmer gently for a further 20 minutes.
  • Add the beans. Divide the mince mixture between taco shells and top with grated cheese.
  • Grill the tacos for about 10 minutes at 200° C in a pre-heated oven or until hot through.
  • Serve

Serve with salad and rice.
