Mince Wraps

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Ingredients:

  • 350g Quality Mark beef or lamb mince
  • 1Tbsp olive oil
  • 1 onion, finely chopped
  • 1Tbsp tomato paste
  • 1 x 375g jar pre-prepared (mild, medium or hot) salsa
  • 200g Mexican-spiced tomatoes
  • 1 x 450g can refried or baked beans
  • 1 cup grated cheese
  • 6-8 soft flour tortillas or persian flatbreads

Method:

  • Heat oil in a pan and cook onion for 1-2 minutes, then add mince, stirring until browned. Drain off excess liquid. Add the tomato paste, salsa and tomatoes and simmer gently for a further 20 minutes.
  • Allow to cool and mix in the beans. Divide the mince between 6 flatbreads and spread evenly with grated cheese. Fold the bottom over the mince and roll up tightly sideways.
  • Secure with a toothpick and grill the wraps in a pre-heated oven until hot through and serve with your favourite accompaniments.
